These tropical treats are free of grains, dairy, nuts, and eggs, and are bursting with sunny flavors like mango, coconut, and lime – perfect for warm weather snacking!

Coconut Mango Bites

Ingredients

  • 1 cup unsweetened shredded coconut

  • 1/2 cup dried mango (unsulfured and unsweetened)

  • 2 tablespoons coconut oil (melted)

  • 1 tablespoon honey (optional, and only if tolerated)

  • 1/2 teaspoon vanilla extract (alcohol-free, AIP-compliant)

  • Pinch of sea salt

  • Zest of 1 lime

Directions

  1. Soften the Mango:
    Soak the dried mango in warm water for 10–15 minutes until soft, then drain.

  2. Blend:
    In a food processor, combine the shredded coconut, softened mango, coconut oil, honey (if using), vanilla, salt, and lime zest. Pulse until the mixture is sticky and well combined. It should hold together when pressed.

  3. Roll into Bites:
    Scoop out about 1 tablespoon of the mixture and roll into small balls. You should get around 10–12 bites.

  4. Chill:
    Place the bites on a parchment-lined tray and chill in the fridge for at least 30 minutes to firm up.

  5. Serve & Store:
    Enjoy cold or at room temp! Store in an airtight container in the fridge for up to 5 days.
